Mechanical harvesting at first light in order to preserve the freshness of the bunches and their aromatic qualities.
Vinification:
Spontaneous fermentation thanks to the native yeasts naturally present on the grapes, in thermo-regulated concrete vats. Vatting for around 25 days with gentle pumping-over extractions.
